Why Keto? There's a lot of current information all about the benefits of following a ketogenic diet; less inflammation, better blood glucose control, weight loss, improved cognitive function, improved neurological function for people with seizure disorders, multiple scleroses, and so much more more. I'll post links so you can read the best scientific research and decide for yourself.
Please note: before starting a ketogenic diet it's vitally important to consult with a physician and registered dietitian to make sure you are a good candidate and don't have any medical conditions that could be worsened or aggravated by this type of diet.
Why Green? "Ketogenic diet" generally conjures up images of platters heaped high with steaks, ribs, and bacon. Well, as a practicing vegetarian AND an advocate of a ketogenic diet I was often stuck eating the same foods over and over until I decided to do some serious web searching and work some kitchen wizardry to widen my food repertoire. Yes, I've been baking, sautéing, roasting, and blending so I can share these delicious discoveries with my private clients and co-workers including other dietitians, nurses, physicians, our chef, and anyone else in reach of my sampling spoons.
